Healthy Chicken Noodle Soup Recipe – Quick and Easy

Noodle that is originated from China has become a universal dish loved by so many people. So, if you spare an hour or so in the kitchen, try this healthy chicken noodle soup recipe. This is an excellent refreshing dish if you have been eating meat, pasta, and pizza the whole week. You need some delicious soup with the noodle to give a new taste for your tongue. Ingredients

Prepare all these ingredients to cook healthy chicken noodle soup recipe.
• 1 chopped medium onion
• 2 tablespoons of olive oil (extra virgin)
• 3 minced garlic cloves
• 2 medium carrots (diagonally sliced)
• 4 fresh thyme sprigs
• 2 celery ribs (cut halved lengthwise)
• 1 bay leaf
• 8 ounces of dried egg noodles
• 2 quarts of chicken broth
• 1 ½ cups of cooked chicken (shredded)
• Kosher salt
• Ground black pepper
• 1 handful of fresh parsley (flat leaf and chopped)

Healthy Chicken Noodle Soup Recipe

Chicken Stock

• 2 large carrots (cut)
• 2 large quartered white onions
• 3 celery stalk (cut)
• 1 garlic head (halved)
• 1 halved turnip
• 2 bay leaves
• ¼ bunch of fresh thyme
• 1 teaspoon of the whole black peppercorns
• 1 whole chicken (or 3 ½ pounds) giblets discarded and rinsed

Cooking Directions

Before you cook the healthy chicken noodle soup recipe, you need to cook the chicken stock first. Follow these instructions to cook the chicken stock.

  1. Prepare large stockpot and place it over medium heat
  2. lace the vegetables and chicken into the pot
  3. Pour in about 3 quarts of cold water to cover both the chicken and vegetables
  4. Add bay leaves, thyme, and the peppercorns. Wait until it comes to a boil
  5. Then, lower the heat and continue to simmer it gently for 1 hours or so until the chicken is done and tender

  10. Strain the stock using fine sieve to remove all vegetable solids

  1. Prepare a soup pot and place it over medium heat. Use oil to coat it
  2. Add garlic, onion, carrots, thyme, celery and the bay leaf into the pot

  9. Garnish it with chopped parsley before you serve it
